Someone, knowing or just discovering that you are mentalist, asks for a demonstration. Handing them the book, you ask them to turn to any page and read the first word - on either of the two pages in the open book before them. Tell them to choose either word and simply think about it. You then reveal the word they were thinking of!
Alternatively... Invite two spectators on stage. Hand one spectator the Pocket Book Test and ask her to turn to any page. Ask the other spectator to choose an ESP symbol (circle, cross, wavy lines, square or star). You have 5 envelopes, each with a different symbol on the front. You then tell the first spectator what word they chose and have the second spectator open their envelope - the word chosen randomly by spectator #1 is written on a piece of card in the spectator's envelope!
